An Easter Dinner to Remember

Once everyone has torn apart their Easter baskets and eaten their chocolate bunnies, everyone is ready to dig in to a big Easter dinner. After all of the eggs have been collected, tide them over by turning those eggs into Paula’s BLT Deviled Eggs. It’s a perfect appetizer for your guests to snack on.

Easter always revolves around a large dinner table full of food. Start the meal off with Chef Jack’s Corn Chowder. It’s a delicious way to sneak some extra veggies into dinner. Plus, the pale yellow color really looks beautiful in the bowl with those pops of bright orange carrots peeking through.

Herb-Crusted Fresh Ham is a wonderful dish for your Easter dinner to revolve around. The thyme and rosemary give the ham that traditional, woodsy roast flavor while the tarragon and lavender give it a bright, almost floral note. And Chive and Onion Mashed Potatoes are the ultimate accompaniment to this dish. They’re rich, creamy, and full of flavor.

For a little greenery on the side, try a Spinach and Strawberry Salad. The strawberries are sweet and delicious in this salad, and you get a nice crunch from the sliced almonds. Who knew a salad could be so pretty and taste so good?

And finally, if you haven’t stuffed yourself full of jellybeans and chocolate bunnies, and you are ready for some dessert, Grandma Hiers’ Carrot Cake is a must to finish out this meal. It’s a delightful homage to the Easter Bunny since he loves snacking on crunchy carrots. This cake has just the right amount of sweetness, and the cream cheese frosting is absolute perfection, especially when topped with chopped pecans.

Decorating your Easter table can be really simple. Pale yellows, greens, blues, and pinks are the unofficial colors of Easter. Use tablecloths, napkins, and plates in this color palette. Plus, bright yellow daffodils are a true flower of both spring and Easter. Make them the centerpiece of your table. Setting out little dishes of pastel colored Jordan almonds or other small candies looks really pretty, and it’s an edible decoration!
